Claytonia perfoliata
No wild salad greenis more important than miners lettuce! This native is pleasingly crunchy, mild-tasting, has large leaves and remains tender even when in flower. Loaded with vitamins, it takes its name from the Gold Rush miners who ate it to cure disease like scurvy. Very easy to grow, it prefers cool and moist conditions.
